“Bright gold in the glass with lively effervescence. Direct on the nose, with extended lees ageing underpinning a rush of mandarin, bruised apple, and fresh-baked bread. The trademark floral tones and pomegranate of the Pinot noir sit comfortably against vanilla bean and crème fraiche, with plentiful yeasty notes providing breadth and a mineral edge.
A voluptuous & creamy mousse pervades the palate, with apple-like acidity defining the linear structure. 2021 is a vintage for those who choose ‘elegance and grace’ over ‘weight and generosity’. A long and mouth-watering finish suggests this will age very well. These cooler years are a reminder of the more ‘classic’ style of English sparkling: wines of crunchy freshness and poise. Further time on cork will bring further integration and harmony to this already wonderful, classic wine.”

Viticulture
A cold spring with some frost. Another wet summer with a few hot weeks but an Indian summer in September and a warmish October saved the day. 2021’s very low yield harvest was dictated by an ‘Armageddon’ in the previous year when a late May frost decimated young shoots. We lost 80% of our crop. We leaf stripped heavily after flowering to maximise sunshine onto the bunches. A tough year to start farming organically; and a step on the road to becoming certified biodynamic in November 2024.
